my brake pedal has started making a hissing noise when depressed lately.
Doesn't seem to be leaking but is there any known problem with the braking system? (other than overheating at high speeds)
On the older cars this was indicative of the brake fluid level being low and/or air in the system.
The brakes still work fine around town but the hiss is starting to annoy me (I'm very particular about my vehicles).

Also, while we are on the subject: would replacing the rotors on the front help with the high speed (100+ mph) shake when braking? Feels like I am dodging the 'warped rotor' bullet every time I need to use the brakes at high speed.

Sounds like a cosmetic issue with the booster diaphragm, if it bugs you that much replace it... Yes the rotors will more then likely take care of the shaking as long as you have no wheel or tire balance issues

A low hiss like a slow leak from a tire could indicate air trapped in the brake lines. try bleeding your brakes
